Amritsari Murgh Makhani (Amritsari/Indian Butter Chicken)

                         As the name suggests “Amritsari Murg Makhani” is an authentic Punjabi dish. The unique Amritsari gravy gives a typical spicy Punjabi flavor together with fresh cream and butter/pure ghee. The unique colour of the recipe comes from the freshly prepared Tomato puree along with some added food colour which adds the extra spiciness. I just skipped the extra colour and tried to connect with the originality of the recipe. 
                       Childhood memories still not blurred and it is still fresh in my mind that we used to visit some Roadside dhaba (typical Punjabi dhaba) whenever we visit Kolkata for shopping or for other reasons. The dhaba was somewhere in the Delhi road and the experience was superb every time we visited the place. Most of the time our menu was Chicken Makhani and Tandoori roti and the taste of Chicken Makhani was typical desi , spicy and original everytime. Hope you all like the way I have cooked and waiting for your feedback and suggestions. 
Servings: 3
Cooking Time: 1 Hour 15 Minutes + Marination Time

Ingredients:
For the marinating:
·        Chicken pieces (boneless) - 350 gm.
·        Ginger paste - 1 tsp.
·        Garlic paste -  1 1/2  tsp.
·        Vinegar – 1 tsp.
·        Coriander powder – 1/2 tsp.
·        Curd - 2 tbsp.
·        Lemon juice - 1/2 no.
·        Cumin powder - 1/2 tsp.
·        Onion (chopped) – 1 big.
·        Red chili powder – 1 tsp.
·        Salt to taste

For the gravy:
·        Tomatoes –  4 (medium size)
·        Ginger finely chopped - 1 tsp.
·        Green chili finely chopped – 2 pc.
·        Fresh cream – 2 tbsp.
·        Coriander powder – 1/2 tsp.
·        Red chili powder – 1 tsp.
·        Cumin powder – 1/2 tsp.
·        Butter – 1 tbsp.
·        Sugar – 1 tsp.
·        Salt to taste

For garnishing:

·        Green chilies - chopped
·        Fresh cream – 2 tbsp.



Step By Step Method:
·        Take 4 tomatoes and blend to make tomato puree.
·        Mix all the ingredients for marination mentioned and make a paste.


·        Cover the chicken pieces with the paste and let it marinate for atleast 2 hours.
·        Now take 1 ½ tsp. of butter and heat in a heavy bottom pan or kadai and add the marinated chicken to it. 

 

                   ·   Cook till the chicken is tender and thicken.


·        Again take another pan and heat 1 tsp. of butter ,add red chili powder, coriander powder, cumin powder, ginger, salt and 1 chopped green chili.

·        Fry for some time. Add freshly prepared tomato puree, fresh cream and cook on medium flame till the puree thickens.



·        Add the puree to the tender chicken along with 1 tsp. of sugar and 1 tsp. of cream. Let it simmer for 25 minutes.


·     Garnish with fresh cream and finely chopped green chilies.

                  ·   Serve hot with Rice or Roti(Indian bread) as you wish.

Tomato Methi Aloor Dum (Spice Coated Potato )

                             Aloo dum is a traditional, delicious, spicy and obviously one of the flavorful dish made of fried potatoes coated with spices. Aloo Dum is one of the hugely popular dishes in Bengal as well of rest of The India and is frequently served in parties and religious festivals. While several versions of Aloo Dum recipes are prevalent in India, the tastiest and most famous version of this dish comes from the Indian state of West Bengal. Besides being a trademark dish served in almost all public gatherings in Bengal along with most obvious Luchi (deep-fried Indian bread /Poori), Aloo Dum is also a regular feature at meal-times in the traditional Bengal household. In addition to luchi, Aloo Dum goes well with any Indian bread such as roti, paratha. I have made the Niramish (vegiterian version ) of it as I did not use onion and garlic and some special touch of fenugreek seed.


Ingredients:
·        Medium size potato(peeled and cut into half)-500 grams
·        Fenugreek seed-1/4 tsp.
·        Tomato-5 pcs.
·        Ginger- 1 inch .
·        Green chili-3 nos.
·        Kasuri methi Powder(Dry and roasted Fenugreek seed)-1/2 tsp.
·        Garam Masala powder (cardamom, clove and cinnamon)-1/2 tsp.
·        White cumin seed-1/2 tsp.
·        White oil-3 tbsp.
·        Ghee-1/2 tsp.
·        Salt – to taste.
·        Sugar – 1 tsp.
·        Turmeric Powder - ¼th tsp.
·         Kashmiri red chili Powder – ½ tsp.
·        Hot water – 1 ½ cup.
Method:
·        Make a smooth paste with tomato, ginger and green chili.
·        Take a pan and put oil. Add potato after the oil become hot.
·        Fry until it become light golden brown. Remove freshly fried potato from heat and keep aside.
·        Add white cumin seed into the remaining oil and add and fenugreek seeds.
·        When starts sputtering pour tomato paste, turmeric powder and red chili   powder and add salt, sugar.
·        Cook for 5 mints. When tomato gets cooked, add fried potato and mix it well.
·        Finally pour 1 ½ cup of hot water.
·        Cook it in low frame covering it.
·        When the gravy become thick and oil is being floating on the top sprinkle the roasted dry fenugreek seed and again cook for another minute.
·        Put off the gas and add ghee (butter) and sprinkle Garam masala Powder over it, give it a standing time for few minutes.

·        So, it is ready to eat.

Chicken Pizza

          Homemade pizzas are sometimes thought of why we are giving so much effort of making pizzas when there is plenty of option to order it online or over phone.But I think there is always good to prepare pizzas at home as you can manage it in your way. The result is of course very healthy and freshly prepared pizzas.
           Here I have made the sauce myself though it is easily available in stores now. I follow some steps of Sanjeev Kapoor to prepare the sauce. If possible one can make the pizza base also at home to get the maximum freshness and also option to make a size of your choice .This time I used readymade bases which is also available in stores. Hope my process gives you a fresh idea of Homemade Pizzas.


Ingredients:

·        Pizza bread - 8 pieces

For pizza sauce:
·        Tomato - 3 nos.
·        Onion-1 no.
·        Garlic - 2-3 cloves
·        Olive oil-1 tsp.
·        Oregano-1/2 tsp.
·        Black pepper powder-1/2 tsp.
·        Tomato ketchup-1/4 cup.
·        Salt-to taste.
·        Basil leaves-2-3 leaves


For chicken filling:

·        Boneless chicken breast(finely cut)-400 grams.
·        Olive oil-1tsp.
·        Oregano-1/4tsp.
·        Garlic chopped-1tsp.
·        Parsley leaves-1 tsp.
·        Worcestershire sauce-1/4tsp.
·        Salt-to taste
·        Chili flakes-1/4 tsp.

Other ingredients of filling:
·        Tomato cut into small cubes (deseeded)-1 cup.
·        Capsicum cut into small cube-1 cup.
·        Oregano (for sprinkle) - as required
·        Mozzarella cheese-1 packet.




Method:

For pizza sauce:
·        Put chopped tomato, chopped onion and garlic in a micro oven proved bowl.


·        Microwave for 2 mints then mix all other ingredients for making sauce with it and make a paste.

·        Thus our home made sauce is ready. You can preserve it in a refrigerator of course in using an airtight container.


For chicken filling:
·        Take a pan. Then put oil .when it becomes hot, add garlic and parsley. Mix it.
·        Add chicken, salt, oregano, Worcestershire sauce and chili-flakes. cook in high flame.
·        When chicken's colour changes to white, remove it from heat.

·        Take pizza breads. Take one by one and spread sauce over them.

·        Sprinkle cheese over it.

·        Then put prepared chicken and chopped tomato-capsicum and next sprinkle oregano.

·        Finally spread cheese all over it.

·        Preheat the oven at 240 degree C and bake for only 12 mints.
·        Of course Serve hot.

Chicken Popcorn

                        It's football season for all and especially there is big Football matches this week. This is the week of SEMIS and FINALS.  Being a fan of spicy food, I have selected Popcorn Chicken, hope it could spice-up the ongoing event.  Please make sure you prepare more and more as you may end-up keep chewing it and I am sure it will taste better than any regular popcorn (not to mention KFC )!  
                      Apart from soccer season all must agree that it is perfect as a starter in get together. Kids also very much fond of this one, I did not use chilly flex as my little daughter like this. It will add extra hot spicy taste if you use bit chilly flakes.
                         


Ingredients:
·        Chicken Breast (Cut into bite size Pieces) – 150 grams.
·        Lemon Juice – 1 no.
·        Plain Flour – ½ cup.
·        Onion Powder – 2 tbsp.
·        Salt – to taste.
·        Black Pepper Powder (heaped) – 1 tsp.
·        Egg White – 1.
·        Milk – ¼ cup.
·        Bread Crumbs – 1 cup.
·        White Oil – for deep fry


Method:

·        In a mixing bowl mix lemon and salt with the chicken.


·        Take a plate and mix flour, onion powder, salt, black peeper powder together, keep aside.

·        In an another container beat egg white, milk , little bit salt , ¼ tsp. of black pepper powder well.

·        Pick up fresh chicken pieces one by one and roll it over the mixture mentioned above (second bullet).


·        Now deep into the egg-milk-black peeper mix and finally coat with bread crumbs.


·        Deep fry into the medium hot oil until it becomes golden brown.



·        Serve hot with sauce and enjoy with this ongoing World Cup Football matches.

Tips :: You can also use chilly flakes to the flour mixture if you want a hot and spicy version.
