Mango macaroni


  Ingredients:
Mango macaroni

     ·        Milk-1/2 liter
     ·         khoya-2 tbsp.
     ·         Sugar-4 tbsp.
     ·         Mango chopped-2 tbsp.
     ·         Bay leaf-1 no
     ·         Green cardamom powder-1/4 tsp.
     ·         Fennel powder-1/4 tsp.
     ·         Salt-1 pinch
     ·         Chopped chocolate-As require

  Method:

     ·         Take a pan with milk. Heat it to boil the milk.
     ·         When it is boiling ,put in it all other ingredients except mango chopped and stir    constantly.
     ·         When it became thick put it in a serving plate or bowl. Garnish with chopped mango and chopped chocolate.
     .         Serve cool.

Mix veg fry


              Serve for 3
Ingredients:
·         Chopped Bean(cut into long) -2 cups
·         Chopped Ridgegurd (cut into cube)-2 nos.
·         Potato(cut into cube)-1  big size
·         Grated ginger-1 tbsp.
·         Asafetida- 1 pinch
·         Turmeric powder-1/4 tsp.
·         Boiled Chana-1/2 cup
·         Cumin seed-1/2 tsp.
·         Bay leaf-1 no.
·         Whole Dry red chili-1 no.
·         Green chili-2 nos.
·         Red chili powder-1/4 tsp.
·         Mustard oil-2 tbsp.
·         Salt- to taste
·         Sugar-1/2 tsp.
Method:
·         Take a pan with hot oil.
·         Put bay leaf, cumin seed, whole dry red chili and asafetida in it.
·         When begin to crackle put all vegetables in it. Mix well. Cook 5 minutes with cover in low flame.
·         open the lid ,put salt and mix.
·         Then put boiled chana and all other ingredients except ghee. Mix well.
·         Cook in low flame with cover till the vegetables are boiled and fried.
·         When done, remove from heat and spread over little bit of ghee on it.
·         Serve hot with bread or hot rice

Masala Tea & Beguni

Masala Tea & Beguni


Serve for 2
Masala Tea:

Ingredients:
·         Cow milk-2 big size cups
·         Water-2 tbsp.
·         Tea leaves-1 tsp.
·         For Masala-1 bay leaf, ½ “ cinnamon stick,1  green cardamom,1 pinch crash pepper,1/4 tsp. fennel seed, a small piece ginger,2 cloves
·         Sugar-1 ½ tsp

Method:
·         Take a sauce pan with milk and water.
·         Heat it to boil. When done, put tea leaves in it and boil for 1 minute.
·         Then put sugar and whole masala in it. Boil further 1 minute .
·         Remove from heat and cover it for 10 -12 seconds.
·         Strain and Serve hot.

Beguni:

Ingredients:
·         Thin slices of bringle-7  pieces
·         Gram flour-4 tbsp.
·         Rice flour-1 tbsp.
·         Corn flour-1 tbsp.
·         Salt –to taste
·         Baking powder-1 pinches
·         Turmeric powder- ¼ tsp.
·         Poppy seed-1 tsp.
·         Black cumin seed-1/4 tsp.
·         Black salt-1/4 tsp.
·         Red chili powder-1/4 tsp.
·         White oil-for deep frying
·         Mustard oil-1/2 tsp

Method:
·         Put the bringle slices on a flatten plate. Spread little bit of salt and red chili powder on it.Keep 5 minutes.
·         In the meantime make a smooth batter with all other ingredients and little bit of mustard oil.
·         Drop the slices into the batter and fry in hot oil.
·         Spread over it little bit of black salt.
·         Serve hot with tea and enjoy.

Murg kalia


                                   Murg kalia

Serve for 3 
Ingredients:

·         Chicken with bone(without skin)-350 gams.
·         Potato(washed and clean)-3 nos.
·         Onion paste-2 tbsp.
·         Ginger- garlic paste-1 ½ tbsp.
·         Curd-1/2 cup
·         Sugar-1/2 tsp.
·         Salt-To taste
·         Turmeric powder-1/4 tsp.
·         Kashmiri red chili powder-1/2 tsp.
·         Green chili slices-3 nos.
·         Roasted mace powder-1 tsp.
·         Whole garam masala-Green cardamoms-2 nos., Cinnamon stick-1/2 “,Clove-3 nos.
·         Bay leaves-2 nos.
·         Mustard oil-2 tbsp.
·         Ghee-1/2 tsp.
·         Sugar-1/4 tsp

Method:

·         Marinate the chicken with salt and Kashmiri red chili powder for 45 minutes.
·         Take a kadai with hot oil
·         Spread salt and turmeric powder over potatoes. Fry and keep aside.
·         Put whole garam masala in to the hot oil.
·         When begin to crackle put  onion ,ginger-garlic and  little bit of salt.
·         Saute till the color takes redly brown
·         When done put marinated chicken in it and cook 5-6 minutes.
·         Then put turmeric powder, cumin powder, Little bit of sugar, Beaten curd in it and stir constantly. If require ,put little bit of water.
·         When oil is floating on, pour 1 cup of water and green chili. Cover the lid and cook in  low flame till the chicken is boiled.
·         When done Remove from heat and sprinkle ghee and roasted mace powder.
·         Serve hot  with bread or rice.

Bread salad

Bread Salad

Ingredients:

·         Bread slices(cutting the sides)-2 nos.
·         Gram flour-2 tbsp.
·         Chopped ginger-1 ½ tbsp.
·         Finely chopped green chili-3 nos.
·         Turmeric powder-1 pinch
·         Asafetida -1 pinch
·         Salt-As per taste
·         Chopped cucumber-1 no
·         Chopped onion-1 no
·         Chopped tomato- 2 nos.
·         Bhugia-1/2 cup
·         Lemon juice-3 tbsp.
·         Black salt -¼ tsp.
·         Mug Sprout-1 cup
·         White oil- as require

Method:

·         Cut the breads into 4 pieces .
·         Make a smooth thick batter with gram flour, little bit of green chilies,salt,asafetida,chopped ginger and required water.
·         Drop the bread pieces into the batter and fry in white oil. Let it be cool and then cut into small pieces.
·         Now in a big mixing bowl put all other ingredients except  bhugia and mix very well.
·         Finally put it in a serving plate or bowl and spread bhugia over it.

Mixed Fried Rice


Mixed Fried Rice

Serve for 2 
Ingredients

·         Basmati Rice -1 ½ cups
·         White oil- 4 tbsp.
·         Food colour (yellow &green)-Both 1 pinch
·         Whole Garam masala - (Green cardamom-3 nos.,Cinnamon stick-1”,Clove 3 nos.)
·         Capsicum slice-1/2 cup
·         Onion slice-1/2 cup
·         Carrot slice-1/2 cup
·         Mushroom chopped-3 tbsp.
·         Chicken sausages-2 nos.
·         Egg –2 nos.
·         Black pepper-1/2 tsp.
·         Parsley chopped-1 tbsp.
·         Salt- To taste
·         Sugar-1 tsp.
·         Bread crumbs-1/2 cup
·         Roasted masala powder(mace ,nutmeg ,clove ,cinnamon stick & cardamoms) - 1/4 tsp.

Method

·         Take a kadai. Put little bit oil & whole gram masala in it.
·         When hot and begin to crackle put rice and sauté 1 minutes with low heat.
·         Put 3 cups of water  &little bit salt in it. Cover the lid. Keep it to boil for 10 minutes in low flame.
·         When done, put the rice in a flatten plate. Let it be cool.
·         Mix yellow colour in 1 tsp. rice& mix green colour in 1 tsp. rice.
·         Beat the eggs with little bit salt and black pepper.
·         Cut chicken sausages in to cube.
·         Drop sausages in it, then quote with bread crumbs and fry it. Keep aside.
·         Take another frying pan with 2 tbsp. Hot oil.
·         Put in it onion, capsicum, carrot ,mushroom and mix it for ½ minute.
·         Put beaten egg in it and mix it.
·         Then put salt, little bit sugar, parsley chopped, black pepper and roasted masala powder in it. Sauté 3-4 minutes. Remove from heat. Keep aside. Mix fried chicken with it.
·        Take a deep kadai. Grease oil in it. Mix rice and prepared mixture well gently.
·        Serve hot with any chicken dish and raita.
