Sahi Tukra With Mango


Ingredients:

  •        Bread – 6 piece.
  •       Sugar – ½ cup.
  •    Milk - - 600 ml.
  •      Dry roasted snof / fennel seed  – ½ tsp.
  •     Cardamom powder – ¼ tsp.
  •      Fresh mawa (grated) – ½ cup.
  •      Pipe fresh mango (chopped) – 1 no.
  •      Bay Leaf – 1no.
  •      Kesar stands -1 pinch.
  •    Ghee – 2 tbsp.
  •    Cashew nuts – ½ tbsp. (finely chopped).
  •    Almond – ½ tbsp. (chopped).

Method:


  •     Heat a deep pan
  •     Pour milk in it for boiling.
  •     At the time of boiling put in it one bay leaf.
  •     When it is boiled put sugar, mawa, snof / fennel seed , cardamom powder in it and stir constantly.
  •     When the milk reduced to half remove it from heat, keep a side and sprinkle Kesar stand on it.
  •     Take bread, cut the side and then cut diagonally.
  •     Take another frying pan and give two tbsp. ghee in it.
  •     When it is melted put bread in it and sallow fry both sides.
  •     Take a flattened serving bowl.
  •     Arrange bread in it for serving.
  •   Pour the milk mixture over it.
  •   Sprinkle chopped mango on it.
  •     Finally garnish with chopped cashew nuts and almonds.
  •     Put it in refrigerator.
  •     Serve cool to your dear ones.



Baked Panir Potato Masala

Ingredients:


1.       Boiled potato(medium)  - 4 nos.
2.       Onion (finely chopped)  - 1 no.
3.       Grated ginger – 1 tsp.
4.       Chopped green chili – 2 nos.
5.       Mano pickle – 1 tsp.
6.       Capsicum (finely chopped) – 1 and ½ tbsp.
7.       Tomato Chopped (medium) – 1 no.
8.       Smashed Chana – 100 grms.
9.       Salt – to taste.
10.   Sugar – 1 tbsp.
11.   Posted cumin seed powder – 1 tbsp.
12.   Hard-boiled egg – 1 no.(grated or finely chopped)
13.   Coriander leaves – 1 tbsp (chopped).
14.   Ghee – ¼ tsp.
15.   Chat masala – ¼ tsp.
16.   Flour – 1 tsp.

Method:

1.       Take a mixture bowl, smash potato, chopped onion ,capsicum,tomato,green chili, chat masala, salt as per test and mango pickle and mixed it well, keep aside.
2.       Take another bowl, put in it chana , little bit salt ,roasted cumin seed powder (keep aside little bit cumin powder for garnishing) and mix it well.
3.       Take a flattened oven proof baking dish, Grease ghee in it, put potato mixture on it and press it with palm equally.
4.       Put on it chana mixture and press it with palm as done before.
5.       Spread on it chopped or grated egg, chopped coriander and sprinkle the cumin powder.
6.       Bake it for 10 – 12 minutes.
7.       You serve it with bread butter toast or can be used as filling of any sandwich.

Mango Kulfi


                   In this hot & humid weather we always go for some light diet and cold drinks, a nice chilled “Mango Kulfi” would do wonders in this hot summer. The recipe is inspired by Chef Vikas Khanna who is one of my favourite since I got the first look in the show “Master Chef”. It is I think very much easy to make and not to mention looks absolute attractive. My hubby became very surprised when I first made this amazing summer cooler recipe and truly said it is really cool both in taste and look.
   As one said that every think have some blessing and curse so in this hot and humid summer Mango is blessing for us, really one cannot resist ripe mango for eating. ”Mango Kulfi” is the perfect cool combination of both Mango and Milk. So go for this and tried at least once , you will feel the taste of Heaven.  



      Mango Kulfi


 Ingredients:

  • Ripe Mango - 5 nos.
  • Milk –  ½ Lt.
  • Grated Mewa – 100 gm.
  • Sugar – ½ cup.
  • Bay Leaf – 1 no.
  • Basil Leaf (finely chopped) – 1 tbsp.
Method:
1.       Boil the full cream milk in a deep pan.
2.       Mix sugar, grated mewa and bay leaf and stir constantly.
3.       When milk become half, remove this hot thick mixture from gas and let it cool in normal temperature.
4.       Then mix chopped basil with it.
5.       Now remove the mango seeds from inside without cutting the mangoes

Process: Take mangoes one by one in your hand vertically and cut a slice from upper head portion (keep it aside), a portion of the seed can be visible and can be removed by gently squeezing mango.
6.       Now pour the milk mixture into be seeded mangoes one by one and close each one with its portion which was previously cut.
7.       Put it in deep refrigerator (approx. 4 -5 hrs. ).
8.       Take this complete frozen mango and peel mangoes and cut each one in ring shape.
9.       Serve this in this summer.
